Other versions do not have anything about eating in this verse.
Other versions say not to gather the grapes from the unpruned vines.

I agree with Susan's suggestion to remove "eat" and add "not."

Before I make the change, what is going on with "you must not plant or conduct an organized harvest"? Were we just trying to avoid "sow and reap"?

The ULB uses "sow" in some books. In Lev it has only "sowing" once for H2221.
The ULB uses "reap" in some books. In Lev it has "reap" three times for H7114, and 'completely reap" twice for H3615. .

On the 22-01 branch Lev 25:11 now says

We can think about "reap and sow" some other time.
