It should be clear that this is a life change. These men are no longer going to be fishermen and are leaving the family business to follow Jesus for the rest of their lives.

I don't know why this should be clear. It's not clear to English readers.

I see nothing in the Greek grammar or vocabulary that indicates anything but them putting down their physical nets and leaving that location with Jesus. Aphiēmi and akoloutheō can both be used for predications about the short term. I suspect the same words would be used if they had gone with him to a party, fully intending to return to work the next day. Only the context indicates that this was no party.

Suggestion:

It should be clear that they immediately put their nets down and left the location with Jesus. If your language requires you to tell whether they were leaving for the rest of the day or for a long time or for the rest of their lives, you should probably translate as though they were leaving for the rest of their lives and have a note indicating that the Greek does not specify how long they would be gone.
